In food industry, the processing of natural products results in rejects which cannot be used to the full extent due to defects. The current standard is to detect defects with the human eye and sort them out manually. However, this manual sorting is subjective even for trained employees, is susceptible to incorrect sorting, leads to high reject rates to ensure quality standards, is resource-intensive for companies and exhausting for employees. The goal of this project proposal is to develop a mobile and modular prototype (Movi-Q) that can perform visual quality assessment in food processing companies (meat processing, fruit and vegetable processing) using artificial intelligence. For this purpose, an interdisciplinary team of food technologists, computer scientists, system developers and users will develop and validate a construct for data acquisition using optical technologies and AI-controlled analysis software. Various use cases support the development of the desired classification system: Case study 'potato' and 'chicken' as well as adaptation of the Movi-Q system to other product groups (case study 'turkey') or other companies ('potato - other company'). Movi-Q is intended to demonstrate the technical and economic feasibility of AI-controlled processes for quality classification in companies on site to show companies concrete AI innovation potential. The transfer of results and technology takes place through articles in the trade press, presentations at conferences or trade fairs, video clips and the involvement of multipliers (industry associations).
