Determination of mycotoxins in grape musts and wine by multi mykotoxin methods

Due to climate change and the improvement of analytical procedures is the occurence of mycotoxin in many food and feed products described. In regard of musts and wine mostly data are available for contaminations by ochratoxin A and few data on patulin. Also few studies are available of trichethecenes, fumonisins, aflatoxins and alternaria toxins in wine or grape musts. The aim of the project is the development of an analytical multi mycotoxin method for the detection of aflatoxins, ochratxins, alternaria toxins, trichothecenes, fumonisins and other mycotoxins in grape musts and wines.

Due to the development and validation of a HPLC-MS/MS multimycotoxin method for musts and wines with 31 analytes, a broad spectrum of mycotoxins in musts and wines could be analysed for the first time. The positive findings of some mycotoxins in the must and wine fractions showed that mycotoxin producing fungi occurred on the berries. Altogether a significant sorting effect could be determined as the patulin and the alternariol concentrations were reduced in the positive fractions of the must samples compared to the control fractions in both vintages. For the first time deoxynivalenol could be detected in the must and wine samples; however, a relation to the type and intensity of the rot infection couldn’t be established and thus a sorting effect could not be deduced.
