The project FRESH, will adress the development of an intelligent packaging system with an integrated sensor function to display the microbiological quality of food. For this purpose, colour based sensory materials, which respond to the presence of biogenic amines are integrated into food package material. The possibility of assessing the actual microbiological burden of food can contribute to an increase in product safety and a reduction in food waste at the end of the value chain. The sensor packaging provides information on whether foodstuffs with an expired minimum shelf life are still edible or deviations in the cold chain have had a negative impact on product quality and safety. Especially in the case of fresh foods and particular susceptibility to microbial spoilage processes, such as meat and fish products, the possibility of real freshness monitoring makes possible the sustainable use of resources. There are currently no commercial freshness indicators in the form of colour based systems on the market. The use of organic sensory colours for the detection of decay products in food packaging is a novelty.
