As part of the project, a reusable sensor label has been developed for the integration into milk packaging. With a process software and a smartphone app, this label enables the collection of relevant environmental data along the logistics chain. A prediction algorithm has been developed that uses the temperature profile of the sensor label to calculate the expected time of actual spoilage of ESL milk, which can exceed the statically specified best before date by up to seven days. To enable the development of the prediction algorithm, the chemical-physical changes of ESL milk during ageing have been recorded and correlations to describe them have been developed. Based on an analysis of the logistics and information processes, a guideline was developed that describes the practical use of the entire system. The benefits of the sensor label were verified in the course of practical tests. Overall, the project offers a customer-oriented, scientific and technical basis with which a contribution to the reduction of food losses can be aimed for.
