Collaborative project: Integration of bio-efficient physical detection and processing modules for sustainable cleaning and desinfection in the food production chain - subproject 2 (PROMONA)

Project

Project code: 281A107116
Contract period: 01.07.2018 - 18.02.2019
Budget: 31,709 Euro
Purpose of research: Experimental development
Keywords: food safety, product safety, food processing, process quality, hygiene

Within the project, the potential use of plasma technology (plasma processed water, PPW) for the cleaning of contact surfaces (e. g. conveyor belts) in the food industry will be assessed. The cleaning shall be applied only on demand to achieve maximal sustainability and resource efficiency. The information needed will be provided by a novel mobile sensor module, based on online measurements of fluorescence intensities during the running production cycle. When exceeding a defined contamination threshold, relevant contaminations will be removed by tailored use of PPW to prevent cross-contaminations during the production of meat, poultry, fruits and vegetables etc. The resulting treatment success can also be proved online in a downstream processing step to prevent e. g. enhanced material costs and production delays caused by overtreatment. At first, a suitable measurement protocol for the detection of specific fluorescence spectra shall be developed with the aim of a fast and comprehensive determination of hygiene related indicators at the facility equipment. From this data, the device parameter for the innovative mobile detection unit will be derived to evaluate the production flow initially and control the progress afterwards. Considering all measurement parameter, a detection module with evaluation algorithms will be developed, in order to allow a specific process design based on the in-situ quantification of the contamination on the equipment. Novel plasma-based cleaning modules will be developed. Further, these modules will be implemented together with the detection module in a demonstrator to allow an evaluation of the interaction of the modules and to assess the sustainability of the cleaning process in a pilot plant scale.
