Purpose of research: Experimental development
The aim of the project is the development of a process to produce a Cronobacter sakazakii-free spray-dried milk and cereal based infant formula. The conventional production technique reveals sometimes products with a charge of these bacteria. This is a risk for the Consumer if the products are handled inappropriate. Therefore, the central idea of the project is to pasteurize all raw materials without quality losses. To achieve this, all sub-processes of the manufacturing process will be investigated. The first steps include the identification of potential sources of the germs, the isolation of the strains as well as their characterization. Furthermore, exact inactivation kinetics and relevant parameters of the materials will be determined. On the basis of preliminary work, innovative technologies for pasteurization, homogenization and spray drying of rheological complex fluids will be developed and adapted. Parameters affecting the product quality will be identified. Scale-up strategies will be developed and their implementation cooperated.
