Purpose of research: Applied research
Aim of the project is the development of a concept for the production, slaughter and processing of ecologically produced boars throughout the entire production chain. It will be examined if it is feasible to adequately nourish boars by a feed adapted to the boar’s nutritional needs under ecological conditions, to keep them in animal husbandries matching animal welfare aspects by adjusting keeping and management measures, and to minimize boar taint under these conditions. During slaughter and processing an applicable detection method for animals with odor deviations will be established and standard operating procedures for the manufacturing of sensory not deviating products from meat with boar taint. It is desirable to use the deviating boar carcasses entirely. For a comprehensive evaluation of the practical applicability of the concept the ecological boar fattening will be evaluated economically
