Purpose of research: Applied research
The aim of this research project was the collection of empirical data about the behavior of consumers when they can choose between local food and organic food with different origins when shopping. By means of a consumer survey and a choice experiment attitudes as well as preferences and willingness to pay were identified.
The survey results demonstrate that the regional food origin was of high importance to the consumers. This applied in particular for fresh food such as fruit, vegetables and meat. The outcome of the choice experiment revealed a strong demand for regional conventional and organic food. In this context high preferences and a high willingness to pay were measured for conventional food products from the region and for organic food from the region and from Germany. The resulting market potential should be exploited by broadening the range of corresponding goods at retail. For this purpose, a clear and comprehensible labelling of the regional respectively German product origin across company borders is needed.
