Design and development of a fresh-cut duster of (bio-) regionally produced fruit and vegetables from Baden-Württemberg. Fresh-Cuts are pre-processed raw products that are washed/peeled/cut and partly frozen and can therefore be used ready for cooking. In canteen kitchens of out-ofhome catering, these facilitate handling and are less personnel-intensive, which accommodates the strained Staffing of the gastronomy. To this end, regional fruit and vegetable producer organisations, processing Service providers and out-of-home catering Companies are to come together in a digital platform and encourage more 'regional' Cooperation. Thus, an optimal interaction of supply and demand of the respective Companies should take place. The accompanying scientific studies prepare the fact-based basis of this project, carry out pilot tests and clarify the respective needs of the demand and supply side of the actors.
