Monitoring of desirable and undesirable substances in foods and biological tissues
Project
Project code: MRI-FL-08-4007
Contract period: 01.01.2001
- 31.12.2021
Purpose of research: Inventory & Assessment
The aim of the investigations is to gain extensive knowledge about desirable and undesirable substances in foods and biological tissues. This can often be achieved by monitoring investigations. In the course of this, foods are analyzed by state-of-the-art analytical techniques on minerals (e.g. calcium, magnesium) and trace elements (e.g. iron, zinc) essential for humans. Additionally, the analysis of blood plasma samples shall deliver further information on a possible under- or oversupply of the population with essential trace elements, such as e.g. selenium. A further aim is to detect toxic substances in foods or biological tissues. This includes i.a. the analysis of cadmium in cereal samples. In the near future, also the preparation of tissue samples from dairy cattle for the analysis of dioxins and dioxin-like PCB and indicator PCB will be started. Detailed knowledge about transfer processes helps to prevent contaminations with foresight and to intervene efficiently if contaminations occur.
