i) Evolving an epoxide hydrolase via directed evolution for efficient biocatalytic transformation of the mycotoxin deoxynivalenol (DON) which is a major concern to food and feed safety; ii) evaluation of the synthetic DON hydrolysis product for its decreased toxicity, and iii) developing a liquid feeding protocol aiming to detoxify DON during this process employing the evolved epoxide hydrolase enzyme.
