Purpose of research: Inventory & Assessment
The project aims at the quantification of dietary fibre contents in a representative selection of milled materials from rye, wheat and spelt according to the definition of the CODEX Alimentarius Commission 2009 (method AOAC 2011.25). The data will be used to update the German Nutrient Database (BLS), which is the basis for the calculation of energy and nutrient intakes within the scope of nutrition epidemiological studies and nutrition surveys.
