Yersinioses are the third most frequent gastrointestinal diseases caused by bacteria in Germany. The main route of infection occurs via contaminated pork. The majority of Yersinia strains isolated from human samples belong to the Y. enterocolitica biotype B4/serotype O3, whereas Y. pseudotuberculosis strains are only occasionally found. Detection of a bacterial (Yersinia) contamination in food products is difficult, because generally low numbers of the pathogen are present and culture-based isolation procedures are rarely successful. Bacte-riophages possess a high specificity for their hosts. This characteristic shall be used to detect and isolate pathogenic Yersinia in food.
