Purpose of research: Basic research
The aim of the project is a comparative study on the allergenic potential of plants produced by organic versus conventional farming. Particularly allergenic proteins will be investigated revealing a high degree of structural homology to stress related proteins. Such proteins do occur under unfavourable conditions (e.g. following treatment with chemicals) and are also considered as marker for the product quality. In how far the method of cultivation under use of pesticides and fertilisers triggers the production of “stress related proteins” – thus contributing to an increased allergenic potential – will be investigated within this project. As an example relevant for organic as well as conventional farming carrots will be used in the analysis. In addition celery will be investigated regarding the allergenic potential.
