Release of bioactive peptides from milk protein by proteolytic enzymes of lactis acid bacteria

Purpose of research: Basic research
So far, systematic investigations are lacking, which which describe the potential of lactic acid bacteria (LAB) to release bioactive peptides. This gap shall be closed by this project by screening for approriate LAB. Strains obtained shall be applied for production of bioactive peptides in dairy products by two approaches: 1. directly by fermentation, or 2. by application of isolated enzymes and subsequent concentration of peptides. For the first approach, it is necessary to analyse the release kinetics of bioactive peptides, in order to optimze production within the fermented product. One such optimization could be the isolation of LAB mutants, which are unable to metabolize the peptides generated. For the sencond approach, cloning and expression of peptide genes shall be applied for efficient hydrolysis of milk proteins. Both approaches shall be conducted in close cooperation with TP LactoPep, where expertise for in vitro testing of bioactivity exists.
