The variability of the sensory quality of asparagus in response to cultivation and post-harvest treatment

Purpose of research: Applied research
In cooperation with different asparagus cultivating enterprises experiments are carried out to test the influence of cultivation as well as post-harvest treatments on the asparagus flavour. The assumption that cultivation as well as post-harvest treatments influence the asparagus quality is still in discussion. In this context the experience is largely based on empirical observations, which cannot be systematized because of the manifold random influences. Therefore, this project evaluates under reproducible conditions the response of asparagus genotypes and their influence on the sensory quality in connection with substance profiles.
Asparagus reacts most sensitively to all tested influencing effects. The influence of variety (n = 12), the age of the asparagus planting (6 years), covering with foil (without, (anti dew), short and longtime storage (0 up to 14 days) under different conditions, different handling by shocking and watering as well as different enterprises on the flavour and aroma (chemically-analytical) were evaluated. Furthermore investigations were carried out to correlate the parameters ?saponin content? and ?bitterness?, and NIRS calibrations for firmness and sugar content were developed.
