Purpose of research: Experimental development
Only a small number of research projects on the prevalence and tenacity of human pathogenic bacteria in vegetables or fruits have so far been performed in German-speaking countries and the data obtained do not yet allow general statements. The aim of the present project is to investigate the incidence and tenacity of the most important pathogens occurring in plant products. For this purpose, at least two vegetable products from two German regions with different climatic conditions (north and south) will be compared. It is also planned to examine different methods to reduce the pathogenic microorganisms on the surface of vegetables and/or fruit before and during their processing. One concrete approach is 'phage biocontrol', i.e. the use of bacteriophage to control pathogenic microorganisms. In parallel, the isolated human pathogens like Salmonella spp., E. coli and Listeria monocytogenes will be characterized phenotypically and genotypically with regard to their serotypes and antibiotic resistance. These investigations will provide data on whether antibiotic residues from animal primary production, which usually enter the field by way of manure, can contribute to increased antibiotic resistance of pathogens. Other project objectives are to define entry points for pathogens in this product chain and to identify appropriate measures for reduction of these pathogenic microorganisms.
