Purpose of research: Inventory & Assessment
In collaboration with the MRI Institute EV selected ingredients are to be quantified in a representative number of samples of various spreads in order to update the database of the „Bundeslebensmittelschlüssel“ and to create a comprehensive nutrient profile. 42 samples of various fat spreads were analyzed for fatty acid composition, the contents of lactose and galactose, as well as the organic acids lactic acid and citric acid. The analytical data were transmitted to the „Bundeslebensmittelschlüssel“ for inclusion in the database.
