We study the influence of food processing on insect proteins. Freeze-dried and ground insectmeal is processed with different procedures and digested in an in-vitro model. In the following analysis, we focus on the stability of proteins. The results will serve as basis for the investigation of the reduction of allergenicity by applying different food processing techniques.
