Optimizing the quality in French fries production (OptiPom)
Project
Project code: A/18/07
Contract period: 01.04.2018
- 31.12.2021
Budget: 364,589 Euro
Purpose of research: Applied research
Keywords: potatoes, French fries quality, fertilization, irrigation, storage, opto-electronic scoring
The aim of the OptiPom project is to obtain the necessary crop production data for well-founded advice. For this we want to determine the effects of the plant cultivation methods on the deep-frying quality of processing potatoes under Bavarian conditions and to derive well-founded advice from them.
Quality problems of French fries due to browning and sugar ends depend on various factors. In the project fertilization, irrigation, harvest time and storage are therefore examined and quantified more precisely. The results are the basis for advice for the Bavarian growers.
Both the plant cultivation optimizations, including their environmental relevance, as well as adaptation strategies for climate change are taken into account.
Sub-goals: Quantification of the effects of drip irrigation and fertilization on frying quality, quantification of the reduction in nitrate levels in soil by irrigation and validation of an independently developed digital rating system for frying quality with the help of artificial intelligence.
