So-called zoonoses, i.e. pathogens that are transmitted from animals to humans, can pose a significant risk to the public, when they are in food. Using the example of the flow of goods for the pig and poultry meat products possible damage scenarios are analyzed by the accidental contamination of food with pathogens. This will form the strategies to prevent disease outbreaks and to act and risk communication in the event of an outbreak will be developed.
