Within the framework of the project, novel mini-legume meals are being developed for sustainable and healthy 'spontaneous nutrition'. The resulting semi-finished and finished products will be available to all bakers in Saxony after the project. Farmers and processors, product developers, specialized wholesalers and the bakery trade will act in close cooperation to develop high-quality nutritional solutions and bring them to market. The cultivation methods for the respective crops are to be specifically adapted and optimized for the intended further processing. To support the rapid build-up of legume demand in human nutrition, forward-looking product concepts are being developed from legumes. They are precisely adapted to the current change in nutritional habits.
