The aim is the development of a digital process model using the example of Collaborative Robots for individualized food in the production range of SMEs as a paradigm for the responsible and gradual introduction of digital transformation and an interdisciplinary approach with timely and full involvement of companies and individuals. And this without compromising the valuable artisanal character of production in SMEs in the food industry as a unique selling point and quality feature. Crucial for reproducible, technical and economic success is the correct sequence of the forms of digital transformation. First of all, the prerequisites must be created in the form of a digital process model in terms of food technology, mechanical engineering, production organisation, it technology and business management (so-called digital twin). The Digital Twin in the next step should used for a representative example of a collaborating robot for the artisanal production of individual foodstuffs, e.g. through generative processes for the creation of free-form structures. The product-related focus is on the individual equipment and decoration (writing, patterns, royal icing, ...) of bakery and confectionery products such as cakes, gingerbread, cookies, ... with free-flowing food products such as chocolate, icing, jelly, food colors ... e.g. for small series such as company anniversaries and individual items, e.g. for orders via online shops, ... on the basis of a robot system that is justly collaborative, i.e. innovative and highly flexible in its use.
