Development and establishment of a network of enterprises in Thuringia and neighboring regions with the aim of the cultivation of high-class quality raw material for the processing to gluten-free food. 1. Development of an network of agricultural enterprises with experiences in cultivation of buckwheat or rather plan to cultivate buckwheat. 2. Development of criterias for plant varieties and quality to the suitability of buckwheat for the processing to gluten-free food. 3. Trial cultivation of different varieties of buckwheat under different regional conditions. 4. Evaluation of the trial cultivation and creation of recommendations for varieties and cultivation under the conditions of Thuringia. 5. Development and optimisation of the technology of cleaning, drying and peeling. 6. Scientific monitoring and analysis of the processing, espec. in regards to added health benefits. 7. Transmission of the results into the practise, amongst others establishment of an offer of gluten-free food for organic market.
