In order to investigate the association between nutrition and health in humans, it is necessary to assess food intake as accurately as possible. However, a well-known limitation of modern nutrition research is the low accuracy of classical nutrition assessment methods which mainly rely on questionnaires. Biomarkers for the intake of different foods, i.e. metabolites that can be detected in blood and/or urine in a characteristic way, allow a more objective and more accurate determination of the acute intake of foods and are therefore an important and urgently needed addition to classical methods of nutrition assessment. To date only few such food intake biomarkers are validated and accepted. Therefore, the goal is the identification and validation of further biomarkers for food intake.
