Purpose of research: Experimental development
Furan fatty acids (FuFAs) are minor lipid compounds occurring in various food items. Thereby, seafood represents a major source for these micro nutrients in the human diet. FuFAs are discussed for their potentially beneficial effects on human health. There is only limited data available on the occurrence of FuFAs in products from aquaculture. With the substitution of marine ingredients in aquaculture feeds, a screening of product quality with respect to this parameter seems reasonable, because FuFA levels and patterns may strongly depend on the applied diet. Possible aims of the project are: - Investigation of FuFA levels in aquaculture products with respect to the applied feed (analysis via GC/MS) - Screening of market samples for FuFAs - Stability of FuFAs during different processing steps for fish products - Differentiation of fish from fisheries or aquaculture by using the FuFA profile
