The planned joint project PhotoDekon focuses on increasing the hygienic conditions during meat production and processing by use of antimicrobial photodynamic catalysts. The aim is to develop and investigate different technological approaches to increase microbiological safety along the process chain: (1) the development of a photodynamic based process for the efficient cleaning and disinfection of conveyor belts in meat processing, (2) the development of permanent antimicrobial coatings with high resistance for applications on conveyor belts and equipment; and (3) the development of a spray disinfectant for surfaces in meat processing which can be applied in daily cleaning routines and which has a temporary antimicrobial effect. In this way, the suitability of food-grade photodynamic catalysts (e.g., riboflavin derivatives) in meat processing will be explored. This comprehensive approach enables to identify the most effective process variants, which may be either found in a photodynamic disinfection of plant components and other contact surfaces during the ongoing manufacturing process, or the application of antimicrobial coatings on surfaces in an operational environment. The gain of practice-oriented knowledge regarding the antimicrobial mode of action and the applicability of the photodynamic catalysts in meat processing will enable a broad application in the area of food production.
