Purpose of research: Applied research
The aim of this study is the development of novel and innovative analytical approaches for the identification and authentication of fish and seafood. The consumption of food from marine sources is constantly increasing on global scale, leading to shortage of resources and increasing cases of food fraud especially for expensive fish and crustacean species. To ensure efficient consumer protection, the establishment of analytical methods for the unequivocal identification of relevant and often closely related species is necessary. We have identified three projects where currently available methods in general do not allow reproducible authentication: 1. differentiation of tuna species, 2. differentiation of crustacea, 3. differentiation of plaice For the identification of above mentioned species, we will develop novel and innovative mass spectrometry-based detection methods that allow for the specific detection of peptide biomarkers (targeted proteomics). The first step in the project is the experimental identification and validation of species-specific marker peptides using different proteomics techniques. Following work packages will be necessary: Acquisition of authentic reference material and authentication of the samples, proteomics for the identification of marker peptides, validation and evaluation of suitable marker peptides, development of a targeted proteomics method for the MS-based detection of marker peptides, validation and commercialization of the method for the use in routine laboratories
