In practice of wheat marketing, it is established to equal baking quality with raw protein content. Therefore, industry pays advanced prices for higher raw protein contents. Farmers fertilize large amounts of nitrogen (N) to reach high row protein contents. The N-fertilization takes place in several portions, recently from ear emergence to flowering. One quarter of the agricultural production land in Rhineland-Palatinate is dedicated to the cultivation of wheat. The insufficient uptake of nitrogen based on the last fertilization immediately prior to the flowering contributes significant to nitrate pollution of waters. For this reason, there is increasing criticism of the common quality rating. In Field trials, varieties are searched, which achieve high baking qualities with less N-fertilizer and high nitrogen efficiency. Resultant varieties and efficient fertilizing recommendations should be integrated in wheat cultivation. The decisive criterion for quality assessment should be the variety instead of the raw protein content.
