The legume per capita consumption of the Germans is significantly lower than environmental and health experts deem desirable. The consumption is many times lower than Nutritional recommendations from the Planetary Health Diet. Even in an international comparison, Germans' legume consumption is among the lowest globally and widely ignores legume in food consumption decisions. The project aims to research the consumption-side potential of native legume species and develops target group-specific strategies that can be connected to existing nutritional practices. For this purpose, aspects of promoting a legume-rich diet are addressed in an interdisciplinary manner. This includes the identification of target group-specific drivers and barriers to legume consumption. This target group analysis is also taken into account in other goals of the proposal, such as strengthening everyday practicability of legume products, improving the level of knowledge about the environmental impacts of legumes, measures to increase willingness to try and Enabling consumption experiences and the exploitation of sensory potential. All aspects should ultimately be used for the development of target group-oriented communication and marketing strategies, including advertising and distribution measures.
