QUALLITÄT is a R&D project which focuses on the development and validation of a PCR based modular rapid tests for the screening and the subsequent quantitative analysis of al-lergens covered by the EU declaration regulation. The CONGEN Biotechnologie GmbH is responsible for Sample preparation/DNA-Isolation and purification, reference-DNA and the quantitative real-time PCR. The Bavarian Health and Food Safety Authority is developing a molecular based screening system for the detection of allergens that are subject to declaration. For this purpose, spe-cies-specific DNA-fragments suitable for identification need to be located in the genome. Compared to current methods, the new method holds out the distinct advantage that all aller-gens that are subject to declaration can be detected in only one analysis. In a second step, a quantitative determination of each allergen is possible. The production of reference materials is the task of the State Institute for Chemical and Vet-erinary Analysis of Food, Freiburg. Typical food matrices as sausages or bakery products shall be manufactured and spiked with all food allergens in the relevant, very low concentra-tion level. Finally, the use of these materials shall allow a quantification of food allergens.
