Purpose of research: Applied research

Long-term storage of fruit and vegetables from organic farming is often problematic since the use of effective fungicides in organic farming in order to reduce fungal diseases during long-term storage is forbidden. Therefore, storage of organically produced apples has proven to be difficult. Some post-harvest diseases only develop during storage and stay unnoticed until the apples come out of the storehouse. Gloeosporium rot, the most dangerous post-harvest disease of organic apples can lead to an over 50 % loss, even under controlled atmosphere storage. A possibility to reduce fungal decay is the hot water treatment which is examined by the Federal Research Centre for Nutrition and Food since 1999. The heat transfer, water circulation and operability of a hot water treatment plant should be improved and efficient water temperatures and immersion times should be determined.
