Purpose of research: Basic research
Phytases are a special group of phosphatases, capable of initiating the dephosphorylation of phytate. Phytases dephosphorylate phytate in a stereo- and region-selective manner generating partially phosphorylated myo-inositol phosphates as well as inorganic phosphate. Phyases could be found in plants and microorganisms. They are also present in animal tissues. Up to now, phytases have only found application as feed additives. However, they are also of interest for food processing, agriculture and environmental protection. Therefore, phytases of new bacterial isolates should be purified, characterized and used in free and immobilized form to a.) improve the availability of phosphate from manure for crops and b.) to generate physiologically active phytate dephosphorylation products for food application (functional foods).
