Purpose of research: Basic research

In a project together with the Institute of Process Engineering in Life Sciences (KIT, Karlsruhe), the droplet breakup of particle-loaded emulsions is studied by the use of a 3-phase model system (particle /oil/water). The influence of various process and material parameters (eg shear rate, disperse phase content, particle load, contact angle) on the droplet breakup in a defined shear flow and possibly a combined shear and elongational flow are tested. A dynamic image analysis system (Sysmex FPIA 3000) is used at the Department of Food Technology and Bioprocess Engineering (MRI, Karlsruhe). Thereby it is possible to distinguish whether particles are located inside or outside of the oil droplets. In parallel the KIT determines droplet size distributions by laser diffraction.
