Purpose of research: Experimental development

The aim of the project "BoogIH" was the establishment of a botanical, zoological and geographical identification of honeydew honeys. For the first time, the analysis of sugar, amino acid and inorganic ions content provides a possibility for this aim. Due to the newly developed methods for the analysis of phenolic components, the sugar spectrum and flavour substances, a clearly differentiation between fir, spruce and pine honeys was possible. Multi-element determination of isotope contents could be performed due to optimisation and further development of a method for isolation of proteins and water. This enables regional determination of the geographical origin. Furthermore, the botanical and geographical origin, could be determined by the magnetic resonance spectroscopy with good predictive accuracy and low cross-validation error. The results of this project provide an important basis for the identification of the origin of honeydew honeys.
