Purpose of research: Applied research

Phytate is considered as an antinutritive factor in human nutrition, because it affect the absorption of minerals and trace elements negatively. In animal nutrition phytate is seen as a source of phosphate. Monogaster such as swine and poultry however, are not capable of dephosphorylating phytate to a significant extent. Therefore, animal feed is supplemented with phytate-degrading enzymes in order to release the organically bound phosphate. Such enzymes are active in the stomach of the animals and inactive in their small intestine. Phytate dephosphorylation the stomach however is incomplete. Thus, emulsion-based systems will be used to deliver phytate-degarding enzymes without inactivation into the small intestine of monogaster. This might result in a complete dephosphorylation of phytate during digestion.
