Purpose of research: Basic research
Fruit flavour (or aroma) is a biochemically and genetically complex trait, which has been considered to date as a difficult feature to improve by traditional breeding. Apple fruit volatiles determining the typical flavour of a specific cultivar considerably affect its sensory quality and its economic value. The pattern of fruit volatiles is often negatively influenced in resistance breeding programmes by the small-fruited apple progenitors used as resistance gene donors. Despite extensive research concerning the analytical and biochemical identification of hundreds of putatively aroma-related volatile compounds in apple such as esters, alcohols, and aldehydes, the inheritance and molecular bases of aroma patterns and the most important single compounds are widely unknown. The project includes the application of a broad spectrum of different analytical methods (human sensory, GC, GCO, GC-MS, GC-TOFMS ) together with genetic and molecular analyses of apple progenies as well as progenitors and cultivars. Research on genetic factors involved in apple aroma is aimed at the identification, mapping, cloning and sequencing of genes involved in the most important biosynthetic pathways. Allelic diversity and expression of candidate genes will be determined and conclusions for the function of the genes will be drawn. The final goal is to develop an improved methodology for an efficient (functional) marker-based molecular characterization within the frame of biodiversity studies as well as in practical breeding programmes.
