Das Hauptziel dieses vom BMBF innerhalb der Leitprojektinitiative "Ernährung-moderne Verfahren der Lebensmittelerzeugung" geförderten Vorhabens ist, den Anteil an gesundheitlich wertvollen Carotinoiden und deren Bioverfügbarkeit in der Nahrung am Beispiel von Karotte und Kartoffel zu erhöhen. Das IEP führt hierzu sowohl in vitro Untersuchungen mit formulierten Carotinoiden an isolierten Zellen durch, als auch humane Interventionsstudien zur Bioverfügbarkeit und zu physiologischen Wirkungen von Carotinoiden aus verarbeiteten Lebensmitteln.
